Sweet Sweet Potato Pie
If you don’t know by now, one thing you will learn about me as I progress with this blog (for my subscribers I know I’m lagging, bare with me just a bit more) is that I usually have some very strong, very random … CRAVINGS!
I’m not talking pickles and ice cream (although admittedly I am curious), but sometimes the craving for a food just hits – and despite my best efforts, will not go away until I have it. All of this prelude to say – this week I REALLY needed sweet potato pie. When I mean need:
– I was content making everyone around me miserable until I got what I wanted;
– I traveled thirty minutes to a mall, to buy a portion of some for the evening – although great, it wasn’t enough; and
– Eventually, I took the long way to work just to buy sweet potatoes and make it myself.
It was beginning to consume me. The need was burning in my l….belly. — was almost cliche there for a minute.
I worried that if I couldn’t find another nice sweet potato pie soon, I’d turn into Audrey II with legs and start approaching random people on the street screaming FEED ME SEYMOUR. — Did I mention already I’m dramatic?
It had been years from my time in Jamaica since my last attempt, and in my mind it was too much work…but it was either I make it myself, or get put out for making too much racket.
For this you’ll need sweet potatoes, pineapple juice, sliced pineapples, maraschino cherries, cinnamon, and nutmeg.
Preheat oven at 350 °.Ingredients
Instructions
Set water to boil.
Peel sweet potatoes, cut in chunks and place in water.
Add sweet potatoes to the boiling water and cook until tender.
Drain potatoes, add melted butter and pineapple juice and mash potatoes until all chunks are gone.
Taste the sweetness of your potatoes, and add sugar if necessary.
Add seasonings, and mix together.
Spray cooking oil on selected dish, and pour the sweet potato mixture into the dish.
Arrange the pineapple slices on top to cover the dish. Add maraschino cherries within the middle of the pineapple slices.
Sprinkle sugar on top if desired.
Place in the oven for thirty minutes and baked until crispy at the top and set.
Serve hot with a choice of protein.
