Sweet Potato Apple Fritters
I always joke to people that my cinnamon allergy is my biggest failure in life. Especially when I think about how I can’t enjoy these fritters – for too long that is. The lightness of the batter, the natural sweet notes from the sweet potato flour and the addition of apple, makes this a home run.
But getting to this recipe wasn’t easy.
Having a full time job and wanting to experiment in the kitchen can often not go as planned. It’s hard to have this great idea to make something, when all I want to do is curl up in bed after a long day and fall asleep browsing the internet while binge watching TV series. Something had to give, and me rewatching Friends for the umpteenth time made my kitchen the winner of this round. I mean did you read how much this is costing Netflix for me to have background noise? I mean, really.
But my mind’s rust for recipe development was clearly evident. It is one thing to have an idea and freestyle it in the kitchen; it’s another when I’m telling people to follow my instruction. So it was time to push past writer’s block and the sheer laziness of setting up a camera and get to work.
I decided to start 2019 on a sweet, easy to whip up and execute note. Plus staring at my pantry, I spotted the lone bag of sweet potato flour, that I have been ignoring since I received it. Don’t get me wrong, alternative flours are great but there’s always a bit of trepidation in the back of your mind wondering if you’ll make a flop of something you’re accustomed making to try the healthier route. Even me, the adventurous one (only in the kitchen) wondered if I should just forego writing this recipe to begin with. However, I’m glad I did. Sweet potato flour is versatile in its uses (I’m learning)and is naturally gluten free and grain free. It also sure helps that it also has traces of minerals and vitamins.
It makes these sweet potato apple fritters almost reminiscent of a donut hole crossed with a Bajan muffin. In my opinion, the perfect weekend breakfast in bed accompaniment. For even healthier fritters, you can substitute the milk for coconut milk. If you’re like me with a cinnamon allergy, cardamom also lends well to these two flavors (especially the apple).
Ingredients
- 1 cup sweet potato flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 tbsp sugar
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1/2 cup chunky apple sauce
- 1/2 cup milk
- 1 egg, lightly whisked
- oil for frying for deep frying
- icing sugar for the top if preferred
Instructions
Add the oil to the pan and heat for deep frying.
Mix the dry ingredients together.
Mix the wet ingredients together.
Combine the ingredients together until just incorporated.
The batter will be slightly wet, scoop into spoonfuls into the hot oil. If the batter is not holding together, add a bit more sweet potato flour.
Fry until golden brown and bubbles pop on the surface of the fritter.
Place on a tissue to remove excess oil. Serve warm.
