Mango Coconut Lassi Popsicles

It’s always nice to have a cool treat that you can have on the weekends – and no, ice cubes do not count. Firm, ripe juicy mangoes are always a welcomed sight in a Caribbean household, but unlike my mother, I’m very particular about the type of mangoes, I’m willing to eat. My stipulations for mangoes have become so specific I rarely have more than five a season; but I have found other ways to enjoy them.

This mango coconut popsicle is a play on the popular mango lassi drink and definitely a cooling treat.

What you’ll need is are three overripe mangoes, coconut cream, plain yogurt, cardamom, and simple syrup.

Ingredients

  • 3 overripe mangoes
  • ¾ cup canned coconut cream
  • 1 cup greek yogurt
  • 1 tsp. ground cardamom
  • 3 tbsp simple syrup
  • 3 cups water

Instructions

Peel and scoop mangoes into blender.
Add rest of ingredients. Blend until smooth.
Pour into popsicle molds, freeze until hard.
