Homemade Chai Milk on the Rocks

I hate milk and hot beverages. Yup, you read it. Besides the once in a blue moon ice cream cone, and cheese in my dishes, I don’t consume milk products whatsoever and tea is just …hot (bleh). Which is why a friend suggested maybe that has something to do with me feeling more arthritic than usual. Enter: Chai Tea on the Rocks!

Background: I’m in my early twenties and have hypermobility syndrome which means my joints move more than the average person, which can cause me severe discomfort, especially in my fingers and knees. But recently although being active and getting a workout in or two, my knees have gotten progressively worse until I found a sneaky yummy way to get that calcium without hating every minute of it (calcium liquid was probably the worse experience of my life).

My homemade chai tea is a favourite with my volunteer programme – the catch? Because of my severe hatred towards milk, I’ve never tasted it (that’s what family is for). But the pain was there and I had to get over it sometime – why not with something that the guys were already raving about — plus it smelled pretty awesome.

I’ll eventually post a second more potent recipe for this chai tea. This one is the make ahead mix that is currently my go to because feeding close to 60 guys breakfast at 6 in the morning, means I have to prioritise when that time comes.

Ingredients

  • 4 tbsps five spice powder
  • 1 tbsp ground cinnamon
  • 1 tbsp ground clove
  • 1 tbsp black pepper
  • 2 instant ginger tea packets
  • 2 tbsps ground cardamom
  • 1 tbsp fennel seeds
  • ½ cup brown sugar

Instructions

Combine all ingredients, mix thoroughly, store in a dry air tight container.
To use, place one black tea bag, 2 tbsp of the homemade chai spice mix, 1.5 cups of milk, 1 tsp vanilla extract in a small pan and simmer for 12 - 15 minutes. Let cool and strain the mixture twice into a freezer friendly bowl.
