Cucumber Ginger Juice
Damn it’s hot outside. See this doesn’t really work as an overexaggeration of fact here because it’s the Caribbean – even when it’s raining more than likely it’s still humid. But let me repeat myself still – damn it’s hot outside. To add to my woes, my fan is broken…be honest with me, is it time to move in my car for the AC? I just might need to consider it. In the meantime, there’s always something about a cool refreshing juice that makes you feel better knowing it’s healthy as well. That’s how I feel about Cucumber Ginger Juice.
My mom used to give me this when I was younger but changed the name so I wouldn’t feel like I was drinking salad *rolls eyes*. Now, I drink this juice in both “slushy” and “strained” versions, ice cold and by the chug full. This drink is great for those summer days when you feel just a bit dehydrated and definitely need cooling down. If you’re having a particularly bad day, you can make it with ginger. Besides the health benefits, what’s the plus side? It’s easy to make and master.
Add ingredients to a blender and pulse until well combined.

Strain twice using a fine sieve.
Add sugar, stir until dissolved.
Refrigerate until cold. If using as a slushy, freeze until partially solid.
