Cheese Paste Sandwiches

As a kid at primary school, my favourite year event was Sports Day and since I can confidently say I had no athletic ability or hand eye coordination, it was strictly because of the multi-coloured cheese paste sandwiches waiting for me in my snazzy teddy bear backpack.

The festive colours were indeed a welcomed treat, my favourite being the “pink” ones that I always saved for last although logically I knew there would be no difference in taste. As I got older, the opportunities to justify a “kid” snack like this became fewer until my mother asked me to prepare a few sandwiches for her class. I realised then and there – we should embrace the child in all of us.

My cheese paste sandwiches now are admittedly less colourful being a “grown-up” (I’m still not used to this classification) and all, but I still love to occasionally make a container to store, and satisfy my inner child for a bit.
