Breadfruit Chips
Sometimes the simplest things give you the most joy, and breadfruit chips are one of them.
Breadfruit is a staple in tropical regions such as the Caribbean and is a starch with a potato like flavour.
In Barbados, breadfruit is typically roasted, boiled and served as a side, or boiled and mashed in what Bajans call Breadfruit Cou Cou….but recently my absolute favourite way is in the form of breadfruit chips.
Heat the oil to 350°.Ingredients
Instructions
Fry wedges on each side until there is no resistance from the fork stuck through the middle.
The wedges should be removed once light golden.
Place fried wedges on paper towels to absorb any excess oil.
Season with salt and pepper while still hot.
Serve while hot and serve with ketchup and/or hot sauce, or a side of stewed minced beef
