Baked Green Eggs and “Ham”

So I was feeling whimsical this week and wanted to make something fun for breakfast. I’ve had great success with these baked omelettes for our volunteer programme and wanted to make them ahead of time for breakfast at work the next day.

The green is slight, but the flavour packed is amazing!

Ingredients

  • 2 slices of chopped up cooked bacon
  • 3 eggs separated
  • 3 tbsps cheddar cheese
  • 1 tbsp finely chopped green sweet pepper
  • 1 tbsp finely chopped onion
  • 1/8 cup full cream milk
  • Salt and pepper to taste

Instructions

Preheat the oven at 350⁰.
Spray two ramekins (I substituted with a large muffin tin – chalk it up to laziness)
In a small bowl add the egg whites, onion and sweet pepper and two pinches of salt.
Whip the eggs with a hand mixer until white and frothy, or about 2 minutes on medium speed.
Whip the egg yolks, milk, pepper and cheese together in a small bowl with a fork.
Add the yolk mixture to the egg whites and fold in with a spatula, mix until just incorporated.
Pour the mixture evenly between two ramekins.
Bake for 15 minutes or until a cake tester inserted in the middle comes out clean.
